1/2 cup Crisco
1 cup sugar
1 egg
1 cup applesauce (sweetened)
1 cup raisins
2 cups flour
1 tsp each baking soda, cinnamon, allspice, nutmeg, salt, vanilla
2 TBS hot water

Directions:
Directions:
Heat oven to 350, Grease and flour 9x13 inch pan.
Place raisins in pan, cover with water and bring to a boil. Set aside. Beat crisco, sugar, egg and applesauce until smooth. Add flour, baking soda, spices, salt and vanilla, beat until smooth. Drain raisins retaining 2 TBS of the hot water, fold raisins into batter, stir water in last.
Bake until cake springs back to touch.

For Cherry Nut cake omit raisins, add 3/4 cup cut up Maraschino cherries, and 3/4 cup chopped walnuts. Heat cherry juice for water.

This has always been Jeff's grandfather's favorite cake. Jeff always loved it if I made it with cherries, I always hid the jar of cherries, because if Jeff found them they would be gone before I had a chance to make the cake!
