2 c self-rising flour
1/4 c sugar
1 T grated orange rind
1 egg, well beaten
1 c orange juice
1/4 c oil (or applesauce for low fat version)

Topping: Combine the following
1/4 c brown sugar
1 T softened butter
1/2 tsp cinnamon
1/4 c chopped nuts

Directions:
Directions:
Heat oven to 400. Combine flour, sugar and orange rind.
Stir in remaining ingredients just until dry ingredients are moistened. Spoon batter into muffin pans. Sprinkle topping over and bake 20-25 min
