1 c whtie rice
1 small onion, chopped
1/2 gr pepper, chopped
1 sm cam tomatoes
2 c boiling water
2 T shortening
1 clove garlic, minced
salt to taste

Directions:
Directions:
Wash rice and dry well, fry in shortening and brown. Add onion, pepper, garlic, tomato and cook a few minutes, stirring constantly. Add hot water and salt, cover and cook over low fire until done, about 30 minutes. Remove cover and cook until rice is dry. Do not stir after adding water.
