1/4 c flour
1/4 t salt
1/4 c butter, melted
4 eggs beaten
1 c cottage cheese
1 4-0z can chopped green chilies
2 c shredded monterey jack or cheddar cheese
green pepper garnish, optional
salsa
flour tortillas

Directions:
Directions:
Mix flour, salt, and butter. Add eggs, cottage cheese, chilies and cheese. Mix well with spoon. Put into lightly greased casserole dish. Garnish with green pepper circles made by slicing horizontally across the pepper. Bake in uncovered dish at 375 for 30-40 minutes.

Place scoop of eggs in warm tortilla and roll. Garnish with salsa to taste.

I usually make this the night before when we are still up partying and stick it in the oven. Then the first one up in the morning has to take it out of the frig to bring to room temperature. It makes a good breakfast after a long night of hanging out at the campfire or with the Smiths at the beach.
