2-lb. boneless, beef chuck roast
1 1/2 cups sliced carrots
2 1/2 cups diced potatoes
1 medium onion, sliced
1 1/2 cups frozen peas
1 tbsp. plus 1 tsp. quick-cooking tapioca
2 tsp. salt
1/2 tsp. pepper
14.5 oz. can whole peeled tomatoes, chopped
1 cup beef broth
1 tbsp. brown sugar
2 bay leaves

Directions:
Directions:
Combine beef and vegetables in a slow cooker. Sprinkle with tapioca, salt,pepper,brown sugar and add bay leaves. Mix in chopped tomatoes and beef broth.
Cover and cook on Low for 8 hours.
Serves: 6
