2 C sugar
2 C flour
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 1/2 C oil
4 eggs
3 C (1 lb) shredded raw carrots

Icing
1 stick butter or margarine
1 8oz package cream cheese
3 3/4 C powdered sugar
1 C chopped pecans (optional)
2 tsp vanilla

Directions:
Directions:
Mix together sugar, flour, soda, cinnamon, and salt. Add oil and eggs; beating in one at a time, then add carrots. Beat for 4 minutes. Pour into 3-8" greased and floured cake pan. Bake at 325 for 25-30 minutes.

For the icing, mix all ingredients thoroughly.
