2 C sugar
3 C flour
1 tsp salt
3 tsp cinnamon
1/4 tsp baking powder
1 t baking soda
1/2 tsp nutmeg
1 C oil
3 eggs
2 C Zuchini squash grated with no seeds
3 tsp vanilla
1 C nuts (optional)

Directions:
Directions:
Mix sugar, flour, salt, cinnamon, baking powder, soda, and nutmeg. Then add oil, eggs, zuchini, vanilla and nuts. Mix well. Grease pans and flour. Bake at 350 for 1 hour. Makes 2 loafs.
