2/3 C Shortening
2 1/4 C flour
1 2/3 C sugar
1 1/4 t baking powder
1 t soda
1 t salt
1/4 C cornstarch
1 1/4 C ripe bananas
1/3 C buttermilk
1/3 C buttermilk
2 eggs
2/3 C chopped walnuts (optional)

Directions:
Directions:
Place shortening in mixing bowl. Sift in flour, cornstarch, sugar baking powder, soda and salt. Add mashed ripe bananas and buttermilk. Mix till moistened; beat 2 minutes at medium speed on electric mixer. Add buttermilk and eggs; beat 2 minutes longer. If desired, fold in chopped walnuts. Bake in 2 greased and lightly floured 9x1 1/2 inch pans at 350 about 35 minutes. Cool 10 minutes, remove from pans. Cool thoroughly.
