2 c. dry black eyed peas
3 quarts of water
1/2 lb. sliced bacon, cut into small pieces
2 c. raw rice
1 med. onion, chopped fine
1 - 2 cayenne peppers
1/4 t. black pepper
salt to taste

Directions:
Directions:
Bring peas & water to a boil. Boil 2 mins., cover & let stand 1 hour. Fry bacon till brown, add onions & cook till golden. Pour into peas, cover & simmer about 1 hour. Stir in rice & seasonings. Cook covered without stirring until rice is tender - 15 - 20 mins.
