2 slices bacon, diced
cup onions, chopped
4 tender yellow squash, sliced
tsp salt
1/8 tsp pepper
1 egg
2 tbsp milk blended
10 saltine crackers, crumbled

Directions:
Directions:
In a heavy saucepan, fry the bacon pieces until crisp. Add chopped onions and cook until clear. Add squash slices, salt and pepper and cover with tight fitting lid. Continue to cook on medium heat until tender crisp. Stir once or twice while cooking.
Transfer to a 1 qt casserole, cover with cracker crumbs and pour egg-milk mixture over top. Bake 15-20 minutes in 350F oven.
