1 medium onion chopped
2 cloves garlic, chopped
46 oz V-8 juice
8 oz Water
1 cup chopped celery
1 tsp salt
tsp pepper
1/2 sm Head cabbage, chopped
3 cubes beef bouillon (optional)
1 pkg frozen mixed fancy vegetables.
1 cup sliced carrots or other non-starchy vegetable

Saute' onion and garlic in small amount of water until clear. Add cabbage, celery and salt and pepper. Add V-8 juice and water. Add bouillon cubes and vegetables. Simmer, for about 45 minutes until cabbage is tender. Serve with crackers and grilled cheese sandwich or glass of skim milk.
