Fresh Yams/Sweet Potatoes (number depends on how many you will feed)
*for 6 people use 4 - 6 nice sized yams
1 cup White Sugar
1 cup Dark Brown Sugar
2 tsp. cinnamon
2 tbsp. vanilla flavoring
3/4 stick butter
1 cup pecan halves or pieces

Directions:
Directions:
Wash & peel sweet potatoes/yams; slice thinly (like potatoes au gratin); arrange in a baking dish (with room for stirring); pour vanilla, cinnamon, and sugars over yams; mix together; place pats of butter and pecans on top; bake in a 350 degree oven stirring every 20 minutes so that the yams are covered; the amount of baking time depends on how many yams are being baked, so check the consistency after at least 45 minutes
