2 Tbs vegetable oil
1 large onion - thinly sliced
1 tsp minced garlic (or more)
1 1/2 tsp curry powder
4 Perdue individually frozen skinless boneless chicken breast
1 cup chicken broth
2 medium tomatoes (1 can chopped tomatoes)
1 Tbs chopped cilantro or parsley
3/4 cup plain low-fat yogurt
salt and pepper to taste
3 cups cooked rice


Directions:
Directions:
Heat oil in a large skillet. Add onion and cook 7 - 10 minutes on medium heat, until golden brown. Stir in garlic and curry powder. Add frozen chicken breasts, broth, tomatoes, and cilantro or parsley.
Bring to a boil then reduce heat to medium - low, cover and simmer until chicken breast are cooked through, about 20 minutes or until internal temperature reaches 165F. Use a slotted spoon to transfer chicken breasts and about half of the onion and tomato pieces to a serving bowl. Transfer cooking liquid and remaining onions and tomatoes to a blender or food processor; add yogurt and blend until smooth. Return this smooth sauce to skillet and bring to a simmer; season with salt. Pour over chicken; serve over rice.
