1 large potato, diced and cubed
1/2 cup butter
1 tsp onion powder
2-3 diced carrots
1/4 cup diced celery
2 - 30 oz cans chicken broth
1/2 cup milk
1 - 10 oz pkg grated cheddar cheese
1/4 tsp salt
1/4 tsp pepper
1-1/2 cup water
3 T flour
3 T cornstarch
1/2 cup cold water

Directions:
Directions:
In a large covered saucepan, simmer the vegetables in 1-1/2 cups water and cook until tender. In another bowl, combine flour, cornstarch, and cold water. When vegetables are tender, combine broth, milk, cheese, salt, pepper and flour mixture and simmer for 20 minutes.
