2 whole chicken breasts
1 T. dry sherry
(boneless, skinless)
2 egg whites
c. cornstarch
1 tsp. salt
1/8 tsp. pepper
3 c. finely chopped walnuts
1 qt. oil for frying

Directions:
Directions:
Cut chicken into bite size pieces and mix with salt, pepper and sherry. Beat egg whites just until foamy and add cornstarch. Beat gently until smooth. Dip chicken in egg white mixture and then coat with walnuts. Heat oil and drop chicken pieces one at a time. Cook until lightly brown. Remove from oil and drain on paper towel. Serve warm
