2 cups sugar
3 cups flour
1 tsp. salt
1 tsp. soda
3 tsp. cinnamon
1/4 tsp. B. powder
3 eggs
3 tsp. vanilla
1 c. oil
3 c. grated zucchini unpeeled
2/3 -1 cup chopped nuts (opt.)

Directions:
Directions:
Blend sugar, eggs and oil. Stir in zucchini and add remaining ingredients blend throughely. Pour into greased loaf pans. Bake at 350 for about 1 hour. Makes 2 loaves
