3 T butter
2 lg. cloves garlic, chopped
2 oz. thinly sliced prosciutto, cut into thin strips
one 28-35 oz. can italian tomatoes, drained and chopped
1/2 t crushed red pepper
1/2 c heavy cream
1/4 c vodka
salt
1 lb. penne
1/2 c freshly grated parm-reggiano

Directions:
Directions:
Cook pasta al dente while preparing sauce.

In skillet large enough to hold the cooked pasta, melt butter, add garlic and cook until golden, about 2 minutes. Stir in prosciutto and cook for 1 minute.

Add the tomatoes and crushed red pepper. Simmer for 5 minutes. Stir in cream and cook, stirring well for 1 minute. Add the vodka and cook for 2 minutes. Season to taste with salt.

Add the pasta to skillet with the sauce and toss until well coated. Add some of the reserved cooking water if the sauce seems too thick. Add the cheese and toss again. Serve immediately. Enjoy!
