1 1/2 lb Yukon Gold or red-skinned potatoes,scrubbed and cut into 1/2 inch pieces 1/4 cup olive oil 3/4 tsp crumbled dried rosemary salt pepper
Preheat oven to 500º. In a medium bowl, lightle coat potatoes with olive oil and sprinkle with rosemary, salt and pepper. Spread potatoes on cookie sheet and bake 20 minutes. Turn with spatula and bake for another 15 minutes
