Eight 6 inch precooked apple sausages (Johnsonville Sausages) cut in half lengthwise
1 stick (1/2 cup) unsalted butter, softened
2 baguettes (about 14 inches by 4 inches), cut in half horizontally
5 T hot mustard (or Dijon mustard)
2 large tomatoes thinly sliced
2 large bunches of arugula

Directions:
Directions:
Heat the sausages, cut side down in a large nonstick skillet over medium heat until they're hot throughout and starting to brown (or use grill). Remove from heat. Spread the butter over the cut sides of the bread. Spread the mustard over the butter. Arrange the tomato slices and arugula on the bottom halves of the bread and then top them with the sausages. Top with the remaining bread. Cut each baguette crosswise into 4 sandwiches, serve while still warm.
