2 lbs large fresh shrimp, peeled, cooked and chopped
2 (8 oz.) cream cheese packages softened
2 small ribs celery, diced
2 garlic cloves, pressed
2 TBS chopped parsley
1 TBS lemon rind
1 TBS prepared horseradish
1 tsp ground red pepper
1/2 tsp salt
Assorted crackers
Garnish: 7 or 8 green onion curls

Directions:
Directions:
Stir together shrimp, cream cheese, and next 8 ingredients in a large bowl till blended; spoon into a straight-sided 9X5 inch loaf pan lined with plastic wrap.
Cover and chill 8 hours. Invert chilled mixture onto a serving plate; remove plastic wrap. Serve with crackers. Garnish, if desired with green onions on top.
