Cream oil, sugar and eggs until smooth. Stir in zucchini and vanilla. Mix dry ingredients together. Blend in thoroughly. Add nuts. Pour into 2 loaf pans . Grease the bottom of the pans only. Bake in a 350 degree oven for 50 to 60 minutes. This bread freezes well.
