2 packages cream cheese (can be low fat but will make a slightly softer cheese cake)
1 1/2 cup Splenda - can use a combination of bagged style and the little packets (about 15 packets has equal sweetness as 1 cup of Splenda. The packets are lower carbohydrate.)
Zest of 1 lemon (or lime, or orange)
1 tsp vanilla
4 eggs
--up to cup sour cream completely optional makes a little smoother cheese cake but adds to the fat calories. I do not usually add the sour cream.

Preheat oven to 350 degrees.Combine all above ingredients in a blender or food processor. Mix till smooth. Spray a standard 8 or 9 round cake pan with no stick spray. Dust the pan with very finely chopped pecan, or almond nuts (about cup)
Pour batter in dusted pan and bake. 350 for 10 minutes then turn the oven down to 275 for 1 hour.

This recipe is very tolerant of variations and substitutions. You can use 1-2 Tablespoons of lemon or lime just to make a key lime version. You can drizzle about 2 tablespoons of most any kind of syrup on it after you pour it in the pan to make a swirl of chocolate or raspberry. I used the DaVinci brand gourmet sugar free raspberry syrup.
