4 boneless skinless chicken breasts 1/4 cup dijon ustard 3/4 cup biscuit mix 1 1/2 lbs small new potatoes cut into 4ths 1 onion cut into 16 wedges 1/4 cup parmesan cheese 1 teaspoon paprika
Heat oven to 400º.
Spray jello roll pan with cooking spray.
Brush chicken with 2 tablespoons of mustard then coat with baking mix. Place 1 chicken breast in each corner of the pan. Place potatoes and onion in center of pan; brush vegetables with remaining mustard. Spray chicken and vegetables with cooking spray; sprinle evenly with cheese and paprika.
Bake 35-40 minutes, stirring veggies after 20 minutes.
