3 beaten eggs
1 1/2 cups sugar
1/2 cup margarine melted.
4 tsp lemon juice
1 tsp vanilla
1 3 1/2 oz or 1 1/3 cup flaked coconut
1 unbaked pie shell

Directions:
Directions:
Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut. Pour into shell. Bake at 350 for 40 - 50 minutes or until a knife inserted halfway between center and edge comes out clean. Cool before serving. If desired, garnish with whipped topping and toasted coconut.
