6 tbsp. vegetable oil
3 Idaho potatoes (about 1 1/2 lbs.)
2 tbsp. fresh chives, finely chopped
salt to taste

Directions:
Grease 2 large baking sheets well with 1 tbsp. vegetable oil. Preheat oven to 400. Peel the potatoes and slice them into very thin slices. Place the potato slices in a large bowl, add the oil, and toss well, being sure to separate the slices. Place the slices on greased baking sheets in a single layer. Bake the potatoes in middle of oven until golden, 12-15 minutes. Remove from oven and transfer to a bowl or basket lined with paper towels. Sprinkle with chives and salt. Serve warm. Leftovers may be stored in an airtight container for up to 3 days.
