6 sweet potatoes 2 cloves garlic, crushed 1/2 tsp. dried thyme (or fresh if available) 1/4 tsp. crushed red pepper (or more to taste) 3 Tbsp. extra virgin olive oil 1/2 tsp. sea salt
Preheat oven to 400°. Peel sweet potatoes; cut in cubes or randomly chop into 1" pieces. On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, thyme, crushed red pepper, and salt. Roast until soft, about 30 min, turning/tossing after 15 min. of baking. Serve immediately.
