Ingredients: 5 TO 6 MEDIUM POTATOES, PEELED, AND DICED INTO 1/4 INCH PIECES 2 CUPS DICED 1/4 INCH PIECES OF ROAST BEEF 1 CUP DICED 1/4 INCH PIECES OF HAM 2 TABLESPOONS BUTTER 2 TABLESPOONS OIL 2 MEDIUM ONIONS, FINELY CHOPPED (ABOUT ONE CUP) 1 CLOVE PRESSED GARLIC 1 TABLESPOON FINELY CHOPPED PARSLEY SALT AND FRESHLY GROUND PEPPER

Directions:Melt butter and oil in a heavy 12 inch skillet over high heat. When foam subsides, add potatoes. Lower heat to moderate, and fry potatoes until golden and fairly crisp. Remove from heat, and drain on double thicknesses of paper towels. Add a little more oil to pan if necessary, and cook onions until soft and transparent, but not brown. Cook garlic with onions. Add the diced roast beef and ham, and raise heat slightly. Fry with onions about 10 minutes. Shake pan often so meat cubes brown slightly on all sides. Stir potatoes into meat and onions. Cook briefly to heat potatoes. Sprinkle hash with parsley. Add salt and pepper to taste. |

Notes: Danish Hash is good as a meal by itself or with sourdough French bread. Also I like to add a couple of fried eggs on top of the hash which, along with salt and pepper, really gives the hash a good flavor. Hash is also good with DelMonte Ketchup as a covering.
