2 POUNDS LEAN PORK SHOULDER OR ROAST, CUT INTO 1/4 INCH CHUNKS
2 16 OUNCE CANS TOMATOES, COARSELY CHOPPED.
4 TABLESPOONS VEGETABLE COOKING OIL
1 CUP CHOPPED ONION
3 7 OUNCE CANS GREEN CHILIES (MED)
4 TEASPOONS SALT
3 CUPS WATER
4 TABLESPOONS FLOUR
4 CLOVES PRESSED GARLIC
1 TABLESPOON OREGANO
2 TABLESPOONS CUMIN

Directions:
In a large skillet (5 quart stock pot) heat the cooking oil. Dredge the meat in flour, add to hot oil and brown thoroughly. Add the onion and garlic, and cook until onion is soft. Add remaining ingredients; simmer covered for about 2 hours, stirring occasionally.
Remove cover, simmer uncovered for about 30 minutes or until desired consistency.

Serve with homemade tortillas and refried beans.
