1 tbsp. cornstarch
3/4 c. orange juice
1/4 c.honey
3 tbsp. soy sauce
1/4 tsp. ground ginger

2 c. sliced celery
1 1/2 cups sliced carrots
4 tsp. canola oil
1 lb. chicken boneless chicken breast cut into 1/2 inch strips or bite size
1/4 c. chopped cashews

hot cooked rice

Directions:
Directions:
Combine 1st 5 ingredients in bowl mix well(great sauce can be used in many stir-fry)
In non-stick skillet or wok use 2 tsp of oil and stir-fry carrots and celery until crisp-tender. Remove and keep warm. In same skillet use remining 2 tsp oil and stir-fry chicken till no longer pink. Return veggies to pan. Stir in orange juice mixture. Bring to boil to thicken about 2 mins. Serve over rice and sprinkle with chopped nuts
