3 large green peppers
1 c. boiling salted water
1/2 lb. ground beef
1 c. tomato sauce
1 egg
1/2 c. dry bread crumbs or cracker crumbs or 1/4 of each
1 tsp. salt 1/4 tsp. pepper
3 tbsp. chopped onion
2 tbps. chopped celery

Directions:

Heat oven to 350 degrees. Cut thin slice off top of pepper. Wash outside and inside. Remove all seeds and membranes. Cook peppers in boiling salted water for about 5 min. Drain. MIx rest of ingredients. Stuff into peppers lightly with mixture. Stand upright in small baking dish. I always add more tomato sauce over the top of filled peppers and a small amount of water to bottom of baking dish. Bake covered about 45 min. then uncover and bake about 10 min.

The meat mixture makes a great meatloaf. I prepare the same way without the peppers. If making meatloaf I drain most of the fluid off with the grease and add more sauce and some beef broth to make a MOIST MEATLOAF that you can thicken with water and flour to make a gravy. It seems I always add a little more tomato sauce to the gravy. Mash potatoe's go great with either. In th summer I buy lots of fresh green peppers and make the meat mixture and stuff peppers and make extra meatloaves and freeze for my convience.
