1 whole fryer (Country Pride or Holly Farms)
1/4 c unbleached flour
poultry seasoning or summer savory
salt and freshly ground pepper

Directions:
Directions:
Cut up chicken, starting with the wings. Next remove the leg and the thigh, then the back. Separate the neck from the breast and wishbone. Finally cut the wishbone away from the breast. Reserve the unwanted giblets and bony pieces for stock.

Heat oil in a heavy skillet. Put flour into a paper sack and coat the chicken pieces with flour. Brown the chicken over medium-high heat. As you are browning the chicken, sprinkle each side with salt, pepper and poultry seasoning. As the pieces are finished being browned, place them in a shallow baking dish. Bake the chicken in a 450 oven for about 40 minutes.
