8 lbs Lamb Chops
2 c Olive oil
1/4 c Fresh lemon juice
2 T Fresh chopped garlic
1 T Dried thyme
1/2 T Dried parsley
salt and pepper to taste
* 2 lemons

Directions:
Directions:
Put all ingredients (except lamb chops) in a 1 gallon zip lock freezer bag and mix well. Add lamb chops in the bag, then place bag in a large mixing bowl to protect from leaks and marinade at room temperature for 1 hour.
Remove lamb chops from marinade and put on outdoor grill. Put the marinade in the bowl to baste from.
Anticipate olive oil catching fire and have water spray bottle to douse out flame.
Baste meat with remaining oil and spice mix while cooking. When medium rare to medium well, remove from grill and place on serving plate. Squeeze juice from 1 lemon over meat. Garnish with lemon slices from remaining lemon.

My favorite way to eat any cut of lamb, but especially chops. Works well for beef and chicken too.
