1 lb. crawfish tails
1 ˝ sticks butter or margarine
1 small bunch green onions
˝ cup chopped parsley
1 pint half and half
3 tbls. Sherry
3 level tbls. Flour, salt and red pepper to taste

Directions:
Directions:
In skillet, sauté crawfish tails in ˝ stick butter or margarine for 10 minutes. In another skillet sauté green onions and parsley in 1 stick of butter or margarine. Blend in flour and gradually add half and half, stirring constantly to make a thick sauce. Add sherry, then crawfish tails which have been drained. Season with salt and red pepper to taste.
