2c. spinach, fresh chopped
2c. strawberries
2c. mandarin oranges
1c. feta cheese (any fancy type)
1c. slivered almond carmelized

Dressing:
1/2c. rice wine vinegar
1/2c. olive oil
1/3c. sugar
1-2tsp. red crushed pepper
salt/pepper to taste

Directions:

1. Chop spinach put in large bowl.
2. Dice strawberries into quarters
3. Sprinkle cheese and oranges over top

*To carmelize almonds, put slivers in a sauce pan with a touch of oil and 1c. sugar. Let melt and grill until almonds are brown. Place on wax paper and let cool. Put in a large zip lock and hammer to break into little bits. Sprinkle over salad last.

Mix dressing in a small bowl or mixer well. Pour over salad just before serving. Serve fresh.

I first tasted this salad at a Fourth of July party. It goes great with any barbecue: chicken or steak.
