2 Tbsp. water
1 can (15 oz) cream of coconut
1 can (14 oz.) sweetened condensed milk
1 can (12 oz) evaporated milk
6 eggs, lightly beaten
2 tsp. vanilla

Directions:
Directions:
1.- Heat oven to 325. 2.- In heavy saucepan over low heat, combine sugar and water, swirl as sugar melts. 3.- Increase heat to medium, continue cooking until sugar turns an amber color. 4.- Divide caramel among 24 ( 2 oz) ramekins, swirl to coat bottom. 5.- Whisk together cream of coconut, condensed and evaporated milk, eggs and vanilla. Divide among ramekins. 6.- Place them in a large roasting pan, fill pan halfway with hot water. 7.- Bake 20-25 min. or until set in center. Cool to room temperature, cover with plastic and refrigerate until cool, before serving.
