This recipe for Easy Coffee Cake, by Ruth Schwardt, is from Favorite Recipes,

Batter: 2 eggs 1 1/2 c. sugar 1/2 c. melted shortening 1 1/2 c. milk 3 c. flour 4 tsp. baking powder 1/2 tsp. salt Topping: 4 tbsp. flour 4 tsp. cinnamon 4 tbsp. butter 1 1/2 c. packed brown sugar
Blend all batter ingredients well in bowl. At least 3 minutes. Put 1/2 batter into well greased and lightly floured 9x13 inch pan. Mix topping ingredients and sprinkle 1/2 of it over batter. Spread remaining batter, and then remaining topping. Bake at 375º for 30 to 35 minutes.
We served this at Ma's Cupboard. People asked about it all the time.
