4 Cups Water, hot from tap
3/4 Cup Milk
1/2 Cup Sugar
1/3 Cup Oil
1-3/4 Tbsp. Yeast
1-1/2 Tsp. Salt
1 Tbsp. Glutin
1 Tbsp. Dough Enhancer
8-1/2 Cups Flour

Mix all ingredients. Let rise until double; knead and place in greased (with shortening) bread pans. Rise again until tops are approximately 1" above sides. Bake at 350 for 35 minutes. Remove bread from pans immediately to cool. Makes three 8" loaves. Tips: You can substitute 1 cup water with - yogurt, rice, mashed potatoes, cottage cheese, sour cream... If you want a sweeter white bread increase oil (no more than 1/2 cup) and use all white flour. Glutin and dough enhancer are not required but do help the bread. Glutin makes a more elastic bread but can be increased in the dough by using bread flour. Dough enhancer decreases the amount of rise time. With dough enhancer you can eliminate the first rise time, although the bread may not be "pretty". To speed up the second rise time place loaves in the oven on the lowest temp. (approximately 170 degrees) for about 20 minutes. The flour in the recipe is the total amount. I normally use 2 cups wheat flour and 6 1/2 cups white bread flour. ENJOY!
