1 Medium Eggplant 1/4 Cup Mayo 1/4 Cup Grated Parmesan 1/2 Cup Saltine Crumbs
Combine cheese and crumbs, set aside. Cut eggplant into 1/2 inch slices. Spread one side with mayo then into crumbs, repeat on other side. Put onto ungreased baking pan in single layer. Bake 15 minutes at 425. Turn to brown other side.
