2 cups self-rising flour
2 tablespoons sugar
2 eggs, slightly beaten
1 1/2 cups buttermilk, plus a pinch of baking soda
1/4 cup oil

Directions:
Directions:
Mix dry ingredients. Combine eggs, milk, baking soda and oil; add to dry ingredients. Stir only enough to dampen flour, batter should be lumpy. Cook on a hot griddle or skillet until puffy and bubbly. Turn and brown on the other side.
Yield: 12 pancakes
