1 cup sugar
1 cup brown sugar
1 cup shortening
1 cup coconut
2 cups oatmeal
2 cups flour
1tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
2 eggs
1 cup raisins (we prefer craisins in place of raisins)

Directions:
Directions:
Beat eggs and add sugars and shortening mix well. Add coconut, nuts raisins,vanilla. Mix.dry ingredients and add to first mixture. Add oats and mix thoroughly. Roll into walnut size balls. Press on cookie sheet with fork. Bake at 375 for 9 minutes.
