2 T olive oil
2 boneless, skinless chicken breasts
1 large onion, diced
1 T minced garlic
1 t ginger
1 T curry powder
1 t garam masala (optional...but adds great flavor!)
1/2 cup crushed canned tomatoes
3/4 cup chicken broth

Directions:

1. In pan, heat oil and cook chicken until lightly brown. Remove and set aside.

2. Over med-low heat, cook onions for a few minutes, then add garlic and cook until golden brown. Add spices and cook for a few minutes longer. Stir in tomatoes and broth. Add chicken breasts and bring to boil.

3. Cover pan, reduce heat to low and cook until tender, about 10 minutes. Serve over rice with some greens on the side (sautéed spinach is a nice side with this dish).

For those of you who like Indian food, this is a really great curry dish...you can control the amount of "heat" by the amount of garam masala you add.
