2 TBS olive oil
2 onions, chopped
2 tsp ginger, chopped
1 1/2 tsp garlic, chopped
2 mangoes, diced
1/2 cup orange juice
2 tsp brown sugar
1 tsp salt
1/2 tsp pepper
1 tsp jalapeno
2 tsp mint

Directions:
Directions:
Saute onions, garlic and ginger in oil, until clear. Add the rest of the ingredients except the mint. Simmer for 20 minutes. Set aside and cool completely. Sprinkle with mint and serve at room temperature.
