Dressing:
1/4 cup cilantro
1 cup oil
5 TBS white wine vinegar
2 garlic cloves
1 tsp cumin
1 tsp serrano chile
Salt and pepper to taste

Rice:
1 TBS olive oil
4 garlic cloves, minced
1 medium onion, chopped
1 tsp serrano chile, chopped
2 cups white rice
4 cups chicken broth

Cilantro dressing:
Put all ingredients in a food processor and pulse until all the ingredients are well blended. Set aside.
Rice:
Sautee onion, garlic, chile in oil for about 3 minutes. Add rice and sautee an additional 3 minutes. Add the broth and simmer for about 20 minutes or until rice is cooked and broth is absorbed. Let cool slightly. Add pest to rice, a little at a time. Add enough sauce to bring the taste to your liking. I usually only use about 1/2 per batch.
