6 cups romaine lettuce, washed

Dressing :
2 tablespoons Parmesan cheese, grated
2 tablespoons water
2 tablespoons red wine vinegar or lemon juice
2 teaspoons olive oil
1 teaspoon anchovy paste
1/2 teaspoon Worcestershire sauce
2 cloves fresh garlic, chopped
Croutons, page 64

Place torn romaine lettuce in a large bowl and set aside.

Combine Parmesan cheese and next 6 ingredients in blender; cover and process until smooth. Pour over lettuce; toss well. Top with croutons. See Page 64.
Yield: 5 servings
