1 lb. boneless skinless chicken breast cut into 1 in. cubes
3 T. taco seasoning
1-2 T. vegetable oil
1 11 oz. jar chunky salsa
1/2 c. peach preserves

2 c. Cooked rice

Directions:
Directions:
Toss chicken in taco seasoning. In a skillet, brown chicken in oil. Combine salsa with preserves, stir into skillet and bring to a boil. Reduce heat; cover and simmer 2-3 mins or until meat juices run clear. Serve over rice.
