1 Cup Sugar
1/4 Cup Cornstarch
1 Can Pineapple, crushed
1/2 Cup Water
3 Egg Yolks, slightly beaten
3 Tbsp. Butter
1 Tbsp. Lemon Juice

Directions:
Directions:
Mix sugar, cornstarch, pineapple and water in a large saucepan. Cook over medium heat until it begins to thicken, stirring all the time. Carefull, it's easy to scorch. Add a little of the mixture to the egg yolks and stir into rest of mixture. Continue stirring until egg is cooked. Add butter and lemon juice. Pour into baked pie shell. cool. Top with whipped cream or meringue.
