Spanish Fried Rice Recipe

3 small cloves garlic
1 t comino seed
1 1/2 c uncooked rice
1 medium onion, chopped
1/8 c cooking oil, (enough to coat bottom of skillet)
1 tomato (diced)
1/4 t salt
1 c water

Directions:
Directions:
Crush garlic and camino seeds in a molajete with a little water and set aside. Fry rice and onion in oil until light brown in color. Stir constantly while frying. Add tomato, salt, garlic mixture and water. Cover. Cook slowly for abou 20 minutes. Do Not stir. Rice is done when fluffy and should look as though each grain has been split.
