2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup sugar
2/3 cup oil
2 teaspoons vanilla
1 teaspoon lemon peel

Directions:
Directions:
Sift flour, baking powder and salt in bowl.

Whisk eggs; add sugar, oil, vanilla and lemon peel; mix well. Stir in dry ingredients. Chill, covered for 30 minutes or longer.

Preheat oven to 400.

Drop cookies by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.

Bake cookies until lightly browned, about 8 minutes.
