4 to 6 potatoes 3/4 c. evaporated milk 1 1/2 tsp. onion (minced) 2 tbsp. butter 1/2 tsp. salt 1 tbsp. parsley flakes 1 c. Cheddar cheese (shredded)
Bake potatoes 1 hour or until done. While they are baking, add onion to milk and let stand. Scoop out inside of potato, saving shells. Mash insides with milk-onion mixture, cheese, salt, butter, parsley flakes. Spoon back into shells. Bake 10 minutes at 400º.
Can be made the day before or can be frozen. Allow extra baking time if frozen.
