1 c. sugar 3 tbsp. cornstarch 1 1/2 c. cold water 3 egg yolks slightly beaten 3 egg whites grated rind of 1 lemon 1/4 c. lemon juice 1 tbsp. butter 1/3 cup of sugar 1 tsp. vanilla extract
1 baked pie shell
Stir 1 c. sugar and cornstarch in a 2 Qt. saucepan. Gradually stir in water until smooth. Stir in beaten egg yolks and bring to boil continuing to stir for 1 min. after it reaches a boil. Remove from heat. Now stir in grated lemon rind, lemon juice and butter. Cool this mixture then turn into baked pie shell. Beat egg whites, until foamy and gradually ad 1/3 c. sugar and vanilla continuing to beat until it forms stiff peaks. Bake at 350 degrees for 15 min. or until lightly browned. Cool at room temp. away from draft.
